The Best, Easy Dinner Solution:

12.19 Easy Dinner Solution Blog V1-01Whew! We are busy people especially throughout the holiday season. On top of our busy schedules there is less day light this time of year, so our full days seem to go by quicker. For many, including me, this can mean depleted energy and definite lack of motivation to take care of mundane tasks, like making weeknight dinners. I’m here to share with you my favorite quick dinner that not only pleases everyone in the family but makes the absolute best leftovers. This recipe is a standard at our home and has quickly become commonplace at my friends’ homes. I hope that this easy dinner option helps get you through busy times now and throughout the year—leaving you more time to enjoy your home and those in it; thus, making your house your home.

Slow Cooker Shredded Taco Chicken

Ingredients:

1-1.5 pounds chicken breast

1 packet taco seasoning 

Approximately 10 oz salsa

Place the rinsed chicken breasts in the slow cooker, sprinkle the taco seasoning over the chicken and pour salsa overtop until the chicken is mostly covered. Secure lid and cook on low for 6 hours (I’ve left mine to cook for 10 and it turned out fine) or on high for 3 hours. Using two forks shred the chicken in the slow cooker and stir. Be sure to use a slotted spoon to scoop the shredded chicken because it gets pretty juicy!

This chicken can be used in so many ways! Here are my favorites:

Chicken Taco Salads

Add the chicken to chopped lettuce, drained canned black beans, drained canned corn, jalapenos, shredded cheese and ranch.

Chicken Tacos/Burritos

Fill your taco or burrito shell with this chicken and your favorite toppings.

Chicken Quesadillas

In an oiled skillet, place a burrito sized tortilla sprinkle half with shredded cheddar. Spoon shredded chicken on top of the half with cheese. Then top chicken with more shredded cheese and fold the tortilla in half, creating a quesadilla. Flip and cook until browned on both sides. These are delicious with sliced fresh jalapenos, cilantro, and caramelized onions!

Burrito Bowls

Add the chicken to cooked rice, drained canned black beans, drained canned corn, jalapenos, shredded cheese and sour cream.
